Steamed Minced Pork with Salted Duck Eggs

Steamed minced pork is a traditional home-cooked meal that most chinese housewives will do.  It’s a very versatile dish that can be changed according to your personal preference.  Salted duck eggs is also another well-known chinese delicacy that is only available in oriental supermarkets.  The taste of salted duck eggs is richer than normal chicken eggs.



500g of minced pork

2 cloves of garlic (finely chopped)

3 salted duck eggs (cooked in boiling water)

5  medium chicken eggs

2 tablespoons of light soya

1 teaspoon of dark soya

3 stalks of spring onions (sliced thinly)



1. Separate the duck egg whites from the yolks.  Cut the whites into small pieces and yolks in half.

2. Cracked the eggs onto the minced pork.  Stir and mix well.  Add all the seasonings and salted egg whites and mix well again.  Arrange the salted egg yolks on top.

3. Cook it on a steamer on high heat for 25 minutes or until cooked through.

4. Scatter the spring onions on top and serve hot with rice.
